Elaboration:
Wine elaborated in the trraditional way, with manual selection of the grapes choosing bunches with small grapes and perfectly matured. The musts were macerated before fermentation during 10 days. The total fermentation and maceration process took place in 22 days. In order to have the greatest memories of this wine, CARRACEDO was not subjected to any aggresive treatment neither filtrations. The bottle was sealed with the best natural cork that allows the gradual ageing and maturation in the bottle. |
AGEING AND DECANTATION:
We recomend to open half hour before consumption.
Service temperature: 18-20º C (64-68º F)
ENOLOGIST DESCRIPTION:
Wine of great character and structure, whose ageing process gives a state of maturity that refines its aroma and flavor, giving it outstanding organoleptic characteristics with harmony and elegance that define it as a author’s wine.
The summer heat and the lack of rain in august and september made the 2005 vintage to became historical in the region of El Bierzo . Harvest took place between the 15th and 19th of september. The grapes were transported to the winery in 12 Kg boxes.
