The winemaking process starts with the harvest of the grapes, which in El Bierzo usually takes place during the first half of September.
At this time, the grapes are harvested manually and transported to the winery, in boxes of 15 kg, in perfect conditions and without being subjected to any aggressive process.

Once in the winery the boxes are turned over two selection tables where bunches are cleaned by eight people that remove unhealthy, unripe or overripe grapes.
At this moment there is a differentiation in the production process in terms of the wine we are going to elaborate.
