Wine description by PUCK:
Its colour is very striking, with variations from golden yellow to greenish lemon-peel tones, with a sense of density reminiscent of absinthe.
The aromas open with intense tropical fruit sprinkled with cinnamon, alongside the vibrant acidity of lemon and the freshness of spearmint.
The mouthfeel is broad, fresh, and harmoniously acidic. The cinnamon from the nose returns, and it offers subtle, elegant oxidative notes on the palate.
With time to oxygenate, the wine gains volume and flavour definition, with baked apple and drops of lemon, toasted notes, and the sweet, rich character of pastry.
As I drink it, I let myself go and at times I feel I am in Burgundy, and at others in Jura. Its slightly bitter finish becomes more pronounced if the temperature is lowered, and this final nuance completes the puzzle of this excellent white wine from Bierzo, with an exciting evocation of Manzanilla from Cádiz.
P.S.: A wine discovered at the 2nd Stars Salon of the Peñín Guide, held last November, to which I will dedicate a separate post; however, I carried out this tasting independently afterwards.
