The key period that determines the quality of our wines starts with the gathering of grapes, harvested at the optimal moment and by hand. The bunches are conveyed to the winery by gentle processes, in perfect condition. After destemming, the loose grapes go through a cooler that chills them to 4°C.
In making our wines we use only the finest grapes at the optimal point of ripeness, with a first manual selection being made in the vineyard during the harvest. And on the sorting table in the winery, only the best grapes are let through.
